After a week end spent drinking & eating, when the week began my body really needed something healthy to come back to ordinary life. Of course, after an entire day of work, I didn't want renounce to have dinner with something tasty also if I come back home really late to cook something decent. So I had to find a compromise: find something quick to cook but at the same time also delicious. Well, I found a solution looking between the shelves of my kitchen when I spotted some black rice I bought last week to prepare a "risotto ai frutti di mare". I just boiled the rice, mixed it with some homemade olive oil and and add some smoked salmon. A perfect light-tasty dinner I recomend you to try!
